Next Cruise-Cozumel, Mexico

Sailing round-trip from New Orleans to Cozumel & Progresso (Merida), Mexico

February 24-29, 2020


I have a small group going on the Carnival Valor for this cruise. We will start from the docks of New Orleans and amble our way down the Mississippi River until we hit the Atlantic Ocean on the way to Cozumel, 2 days later.


There are so many excursions that can be planned on or off the ship. How about a private jeep tour with lunch and snorkeling. Or a Catamaran Tour with lunch & snorkeling. Or a visit to the Tulum Mayan Ruins. I have taken cooking classes on a beach property, then gotten a massage on the beach & then a swim in the ocean. And there is always a pharmacy stop in Cozumel to stock up on anti-biotics (I get ear infections a lot). Or a Private Dune Buggy Tour. Last year, my sister and I did a swim with the dolphins, the stingrays and then a private catered lunch for the 12 of us-what a wonderful experience. Cozumel is centered around sun & swimming and it's always "sunny" in Cozumel!

My Keto Journey!

This is not going to be a Keto blog or my trying to change your lifestyle & diet. But this is my blog and my journey. I started last April and though I have only lost 10 pounds, I have lost many inches and the struggle continues. No more belly fat-that's a plus (but I have to watch that carefully). Anyway I thought I would share some recipes that I have adapted for my keto lifestyle. They're easy and delicious-at least I think so.


MY HAM & CHEESE CREATION (actually, I started this with Chicken & Cheese, but found that I like Ham & Cheese better and I am not a ham eater-I just had leftover ham in the house, that someone had brought over and I used it up.)

1 cup of chopped ham (or chicken)

1 cup of shredded cheese (your choice-I use whatever's in the house)

2 tablespoons of cream cheese (optional)

1 tablespoon of coconut oil

1-2 tsps. of grated garlic

1/2 cup chopped vegetables (onions & mushrooms, onions & peppers, etc)

do not use more than 1/2 cup of vegetables, it tends to overwhelm the dish


Spray a small casserole dish with coconut oil spray or pam spray. Take your cream cheese and spread over the bottom of the dish-think of this as your fat for the day. Set aside. In the meanwhile, in a small fry pan, heat to medium heat coconut oil & garlic, add vegetables and saute' until done. In another dish, mix ham & cheese and then add vegetable mixture. Stir it up well, add to casserole dish. Bake at 350*F for 30 minutes.

This needs to be eaten hot! But it is so rich, that I get 4-5 meals out of this. Try it. You'll like it!






ROOT BEER FLOAT

My friend thought I was suffering one day from lack of ice cream, so she brought me all of the ingredients for a Keto Root Beer Float: A&W diet root beer (no carbs) & Breyers low-carb vanilla ice cream (5 carbs). The ice cream tastes a little like ice milk, but I have my Keto Friendly Root Beer Float now! Thanks Peggy H.




Chicken & Cheese Enchiladas (low carb)


Start with low carb tortillas (at your local grocery store)

Can of enchiladas sauce

1 cup chopped chicken

1-2 cups shredded cheese


In small baking pan, put 1-2 tablespoons enchiladas sauce, spread it all over. Take a tortilla, place 1 tsp enchilada sauce, 1 tbsp. chicken and 1 tbsp. shredded cheese. Roll it up and place seam down in the pan. Keep making enchiladas until you run out of room (probably 3-4). Pour enchiladas sauce on top to cover all of the tortillas. Cover with remaining shredded cheese. Bake at 350*F for 30 minutes. This can also be made with leftover meatballs, ground beef, or cheese. I usually cut this after cooking into appetizer size portions and serve with sour cream.

I love Airbnb. How about you? We stayed one time for a week in the Hamptons on Long Island, 1000 feet from the beach for July 4th week in a small cottage for $50 a night-such a deal. I have used Airbnb in Venice & Rome. With Airbnb, you have the option of getting a room in someone's home or the whole home. I prefer the whole home. For me each stay has been very successful, but I have heard of other stories where it has not. One woman told me they rented an Airbnb in Portland, OR and arrived to find an apartment filled with Satanic symbols-Wow! They changed their mind about staying there.
